Thai Green Chicken Curry – Easy, Creamy & Flavorful

Ingredients:
- 300g boneless chicken (thin slices)
- 2 tbsp Thai green curry paste
- 1 cup thick coconut milk
- 1 onion, chopped
- 2 green chillies
- Fresh basil leaves
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 tbsp oil
- Salt as needed
- Optional veggies: bell peppers, zucchini, carrots
How to Make (Detailed Steps):
- Prepare the Pan & Build the Base : Heat 1 tbsp oil in a pan over medium heat. Add chopped onions and sauté until soft and translucent.
- Add the Green Curry Paste : Add 2 tbsp Thai green curry paste. Stir and fry for 1–2 minutes to release aromatic oils
- Add Chicken : Add sliced chicken and coat well in the paste. Cook for 3–4 minutes until the chicken turns white on the outside.
- Add Coconut Milk : Pour in 1 cup thick coconut milk slowly and stir. Let it simmer for 8–12 minutes until chicken becomes tender
- Season the Curry : Add fish sauce, sugar, green chillies, and salt. Simmer for another 2 minutes.
- Finish With Basil : Turn off heat and add fresh basil leaves for aroma and freshness.

- Use full-fat coconut milk for best creaminess.
- Avoid high flame to prevent splitting.
